This recipe is for Baked Vanilla Peaches in a Red Wine sauce. It is so simple but the result is a restaurant quality desert that tastes wonderful.
- 4 medium Peaches
- 1 Vanilla pod
- 4 tablespoons Sugar
- half a bottle of a medium bodied Red Wine
- 200g Creme Fraiche
- 200g Greek (set) Yoghurt
- 2 tablespoons Honey
Peheat your oven to 140 degrees Centigrade
Split the vanilla pod lenthways, scrape out the seeds and cut the pod into four thin sticks. Push these through the peaches.
Place the peaches in a shallow oven dish. pour wine over top and then sprinkle with the sugar. Place in the oven for 1 hour to give the red wine sauce time to reduce.
Mix the Yoghurt, Creme Fraiche and Vanilla seeds together with the honey and refridgerate. Serve as a cream with the hot peaches.
