Banana cupcakes with chocolate frosting. An easy cupcake recipe that delivers on flavour and looks.
Nicola knocked up a batch of these in a hurry when we learned her brother was coming over with the nieces. By putting the bananas in the cupcake and the chocolate in the frosting you can produce a brilliant flavour combination without having to depart from your basic cupcake recipe.
- 120g Plain flour
- 130g caster sugar
- 1tbsp baking powder
- 1 tsp cinnamon powder
- pinch of salt
- 80g french (i.e. unsalted) butter
- 120ml milk
- 2 free range eggs
- 120g mashed banana
For the frosting:
- 300g icing sugar
- 100g unsalted butter
- 40g cocoa powder
- 40ml milk
Mix up the dry ingredients with the butter to get a breadcrumb like consistency and then slowly add the wet ingredients in this order: milk, eggs, mashed banana.
Keep beating gently till you have a nice even consistency and then spoon the mix into paper cupcake cases and bake in a preheated oven at 170degrees (GAS 3) for 20 minutes.
While the cakes are cooling whip up the frosting by beating together the icing sugar, butter and cocoa powder. Then slowly add the milk (an electric whisk is best for this job) whisking for up to 5 minutes or so to get really light and airy frosting.
Make sure the cakes are cold before spooning or piping a generous dollop of the frosting on to the top of each cake.
Decoration is entirely your own decision. If you have just spooned the frosting on, then a neat trick is to use a cheesegrater to grate some chocolate directly onto the frosting.
