Broccoli and Tahini Soup Ingredients:
2 tsp olive oil
1/2 small onion,
3 cloves garlic
250g of broccoli florets
500ml vegetable stock
2 Tbsp tahini
black pepper to taste
Broccoli and Tahini Soup Instructions
Finely Chop the onions and soften in a deep pan with a little oil over a low heat for at least five minutes till the onions are translucent.
Finely chop the garlic and add this and the and chopped broccoli florets to the pan.
Add the hot vegetable stock and boil for 20 minutes.
Remove from the heat and stir in the tahini.
Puree the soup in a blender.
Season with a little salt and lots of black pepper and serve with crutons.
