4 chopped onions
3 tbsp butter
2 tbsp flour
1/2 litre of beef stock
1/4 glass of white wine
100 g Gruyère cheese (cubed)
Intructions for French Onion Soup
To make an easy classsic French onion soup, fry the onions gently in the oil until soft and translucent. Add the flour, and cook for a minute stiring rapidly. Now pour in the beef stock and simmer for half an hour.
When you are ready to serve, butter 4 slices of french bread and place them under the grill till golden.
Place the toast in the bottom of soup bowls along with the cubes of Gruyère cheese and cover with the soup.
There are lots more easy soup recipes on this site. I particularly like this one because the Gruyère gives sich an individual taste and texture. If you like it try doing a globe artichoke soup which is similar to the onion soup above, in terms of preparation but has a wonderfully nutty, smokey flavour.
