Easy cheesecake recipes

Cheesecake tastes so great. When I was little I didn’t like the idea of cheese in a sweet cake and so always refused my mother’s baked cheesecakes throughout my childhood. If only we could turn back time!

When it comes to very easy cheesecake recipes, there are really just two basic cheesecake types, one baked the other just chilled in the refrigerator.

The first we will show you is a quick and easy dessert recipe for refrigerator cheesecake. There is a link to an easy baked cheesecake at the bottom of this page.

Quick and Easy Refrigerator Cheesecake (Lemon Philly Pie)

Ingredients for this easy cheesecake

  • 10 digestive biscuits
  • 1oz butter or margarine
  • a small tin of condensed milk
  • 125g Cream Cheese
  • Juice of 1 lemon

Quick, easy and delicious cheesecake!

Get 10 digestive biscuits and crush them to a powder (place them in a bag or cloth and hit repeatedly with a rolling pin. Add 1 oz of butter and press it together with the crumbs to make a dough for the cheesecake base. Press the dough into the bottom of a greased 9 inch Pie Dish.

Mix together a small tin of condensed milk with a small (125g) packet of cream cheese (e.g. Kraft Philadelphia). whisk for two minutes and Squeeze in the juice of one lemon. Whisk for another 20 seconds and then pour in to the pie dish. Now just leave your cheesecake in the refrigerator to set.

Big and Creamy American Cheesecake Recipe.

Ingredients: (serves up to 16) This is a classic baked cheesecake. It is delicious.

For the base:
2 cups graham cracker crumbs (digestive biscuits)
3 tablespoons sugar
Pinch of salt
6 tablespoons unsalted butter

For the filling:
2 pounds cream cheese
1 cup granulated sugar
1/4 teaspoon salt
2 teaspoons of vanilla extract
4 large eggs
2/3 cup sour cream
2/3 cup double cream
1/2 cup fresh raspberries

To make the crust:
Grease a 9-inch round spring form baking tin (wrap the bottom of the pan in a double layer of tinfoil)

Now make the biscuit base by melting the butter and then pouring it into a bowl with the other base ingredients. Now knead into a crumbly dough and press into the bottom of the spring form tin. Put the tin in the freezer while you preheat the oven to 350°F. After 20 minutes take the tin from the freezer and bake the base for 10 minutes. Now remove it from the oven and turn down the oven temperature to 325°F.

To make the filling:
Beat the cream cheese by hand for about 5 minutes to really soften it up. Add the sugar and salt and continue to beat another 5 minutes or so, until the cream cheese is light and fluffy. Add the eggs one by one, beating for a full minute after each addition do the same with the vanilla and then finally stir in the creams.
Place the foil-wrapped spring form pan in a roasting tin and scrape half of the batter onto the biscuit base. Add a layer of raspberries and then pour on the rest of the batter. Place the roasting pan and spring form in the oven and then pour boiling water into the roaster to come halfway up the sides of the spring form, effectively creating a ban marie.
5. Bake for 1 hour and a half hours till the cheesecake has a brown top. Turn off the oven heat and open the oven door but leave the cheesecake inside to slowly cool for another hour.
Now remove from the oven and place the spring form on a rack to fully cool (at least 4 hours). Then chill overnight before decorating the top with a few more raspberries and serve your stunning cheesecake.

A totally different but still easy cheesecake recipe with a far lighter texture can be achieved with a simple baked cheesecake. The great thing is that a baked cheesecake can have almost any flavour added to it.
