Here is a simple recipe for a super-rich tomato based homemade spaghetti sauce.
Ingredients for basic spaghetti sauce for 4 to 6 people
- 3 tablespoons olive oil
- 2 onions chopped
- 2 cloves garlic crushed
- 30-40 peeled plum tomatoes (chopped), or 4 tins of plum tomatoes
- large handful of fresh basil leaves
- pinch of oregano
- half pinch of chilli powder
- half teaspoon sugar
- pinch of salt
- 2 pinches of black pepper
- Parmesan Cheese
First you have to sweat the onion and garlic on the olive oil for about 5 minutes on a very low heat. You want the onions to go translucent.
Now add the tomatoes, stir the pan, turn the heat up to low medium and cook. For an authentic italian flavour, cook the pasta sauce for at least an hour, 2 if possible. The longer slower cooking method tastes about 1000 times better than the quick cook methods.
15 minutes before you want to serve, taste to see if you need the sugar. The longer the sauce has been cooking, the less likely you will need to add any sugar at all. Put your spagetti on to cook in plenty of salted boiling water. Add the oregano and chilli to the sauce and cook on a higher heat for a few minutes. Now turn the heat off and taste the sauce. Add salt and pepper if needed and then tear up the basil leaves and add them all.
DONT OVERCOOK THE SPAGHETTI
Drain it and serve whith a generous helping of the sauce and a sprinke of parmesan on top. Serve with a robust red wine.
