Ice cream is the perfect treat on summer days. Making your own ice cream allows you to mix the flavours, sweetness and textures exactly to your own liking.
Then when you tuck into a bowl of your own home-made ice cream the satisfaction and pleasure are doubled.
Easy Ice Cream Recipe
The first bit of good news is that basic Ice Cream is really easy to make. What is more, really fancy ice creams are just as easy to make as easy ice creams
Basic Ice Cream recipe
The basic Ice Cream recipe is just a custard which is mixed and then frozen.
Ingredients for easy vanilla ice cream
3 egg yolks
500ml of milk
100g of sugar
1 vanilla pod
pinch of salt
250ml of double cream
Instructions for easy vanilla ice cream
Firstly, slice the vanilla pod in half lengthways to expose the seeds. Scrape these seeds out of the pod and add them to the milk in a saucepan. Heat the milk and vanilla until almost boiling. Remove from the heat add the sugar and stir till it dissolves. Wait about 3 of 4 minutes till the milk has cooled a bit (otherwise you end up with a bowl of scrambled eggs ) and then add the egg yolks and beat into the milk. Add the pinch of salt. You have now made a basic custard.
Allow the custard to cool completely before folding in the whipped cream. Place in a suitable container and freeze. If you are using an ice cream maker, follow the instructions. If you do not have an ice cream maker, simply remove the bowl from the freezer every fifteen minutes and give it a vigorous beating before returning it to the freezer to continue freezing.
Ice Cream machines versus Hand Made Ice Cream
Ice cream machines keep the custard moving as it freezes which means the ice forms much smaller crystals, leading to a smooth silky ice cream texture. There are some excellent ice cream machines available and if you love ice cream then I urge you to invest in one.
Whichever method you use; beating by hand or using an ice cream maker, once frozen, the ice cream will keep for weeks.
