Zesty Pea Soup with lemons and Mint
This fresh, light and delicious pea soup is a wonderful dinner party starter or quick main course.
Finely dice 125g of shallots (scallions) and gently fry them in a little butter. Add the zest of 1 lemon after a minute and contine to gently fry until the onions are soft, but not coloured,
Add a kilogramme of peas (frozen are fine) and 2 litres of a light chicken Stock.
Boil for five minutes and then remove from the heat. Now simply add the juice of the lemon, a good sprig of mint and liquidize the lot in a blender. Serve with Brown Soda bread.
