These amazing cookies from Italy are wonderfully soft and fruity.
- 500g all-purpose flour
- 400g white sugar
- 250g suet (or shortening)
- 3 medium eggs
- 1 tablespoon baking powder
- 1 tablespoon of vanilla extract
- pinch of salt
Cream the suet and sugar together, then add the eggs, vanilla, and a pinch of salt.Now add the flour and kit into a smooth dough.
- 250ml milk
- 400g dried figs
- 250g raisins
- 1 teaspoons ground cinnamon
- 50g light brown sugar
- 1 small orange (with zest)
- 1 small apple
- 100g cups chopped nuts
All the filling ingredients need to be turned into a sticky paste. The easiest method is to throw it all in a food processor (except the orange juice) and turn it on. Add the orange juice slowly and stop just before the mixture gets liquid
To make the cookies roll out a 2 inch strip of dough and spread a pencil thick line of the filling along the middle of the strip. Now fold the dough over to make a roll.
Cut it in one inch slices and place your cookies on a lightly greased baking tray.
Place in a preheated oven and bake for 10 to 15 minutes at 180 degrees centigrade.
