A delicious seafood spaghetti dish that is so low in calories you won’t believe it.
Ingredients for two servings of healthy scallop pasta
- 2 portions of squid ink spaghetti
- 4 large sea scallops
- olive oil
- 2 flattened cloves of garlic
- 4 tablespoons of light fish stock
- lemon
- parsley
- paprika
- chili powder
Cook the black spaghetti (if you cannot find squid ink spaghetti any plain dried spaghetti will do, although if you buy ‘fresh’ pasta which is made with eggs, the cholesterol and calories will rise).This will take about 10 minutes.
Peel two garlic cloves and then flatten them with the side of a heavy knife. This will allow the flavour to come out without chopping the garlic up.
Sweat the flattened garlic in a dessertspoon of olive oil for about 3 minutes on a low heat. You want the oil to take on the garlic flavour.
Remove the garlic and turn the heat up to full and sear the outside of the scallops. Add the juice of half a lemon and the fish stock.
Add a pinch of chili powder and two pinches of paprika. stir for a minute more and then drain and add the pasta which should now be cooked.
Sprinkle with chopped parsley and serve with a further wedge of lemon.
