Low fat and delicious go hand in hand and Indian food is particularly easy to make low fat without skimping on flavour.

Beef Curry Ingredients

Serves 4

  • 700g very lean Steak
  • 4 tablespoons yoghurt
  • 2 tins chopped tomatoes
  • 400g onions
  • 4 garlic cloves peeled
  • garam masala
  • cumin powder
  • paprika powder
  • chilli powder
  • coriander seeds
  • cumin seeds
  • cardamon pods (4)

Low Fat Beef Curry Instructions

Extra-lean minced beef is the key ingredient of a low fat Beef Curry. Don’t skimp on quality and ask your butcher to remove as much fat as possible. You only need a little over a quarter pund of beef steak per person, so for 4, get about 1and a half pounds (700g).

Now cube the low fat beef (1 inch cubes) and marinade in a curry mix comprising 4 tablespoons of very low fat natural yoghurt mixed with 2 teaspoons of garam masala powder, one teaspoon of cumin powder and half a teaspoon of paprika powder and half a teaspoon of chilli powder. Leave this in the regfridgerator to marinade for at least two hours and preferably overnight.

Now it is time to light the stove and dry fry a teaspoon of cumin seeds, a teaspoon of coriander seeds and 4 cardamon pods. After a minute they will begin to fizzle and pop in the frying pan. take them from the pan and crush in a pestle and mortar.

Now add just one tablespoon of oil to a pan and gently fry three quarters of a pound of chopped onions and 4 peeled garlic gloves. After five minutes, add the beef and yogurt. Also add the spices you dry fried a little while ago After another 10 minutes add 2 tins of chopped tomatoes and a pinch or three of salt and pepper.

After 45 minutes to 1hr cooking, serve your low fat beef curry with brown rice. A raita of chopped cucumber in low fat yoghurt is an excellent accompaniment. This curry is a family favourite.
