This fantastic cake serves 6 to 8 people and is easy to prepare in a food mixer so the kitchen doesn’t even get messy.
How to make a wonderfully nutty, rich and moist Pear and Cocolate Cake.
Firstly, preheat your oven to gas mark 3 and grease a lof tin with butter.
Now grind 4 oz of mixed nuts to a fine flour (in a blender if you have one) and add the same quantity of self raising flour. Now add 6oz of cubed cold butter and whizz to the consistency of breadcrumbs.
Add 2 large eggs 2 medium pears (skinned and cubed), 5 oz caster sugar and 3oz cooking chocolate.
Stir well and spoon into the prepared loaf tin. Add the slices of two further pears on top and stick it in the oven for about an hour.
Let it cool a little and then serve. It also tastes great once completely cold.
