Christmas Gingerbread Recipe

Chris Says: "At Christmas a lovely batch of gingerbread cookies or a gingerbread house can make the occasion so special. My grandma used to make this recipe with my sister and I when we were little. Although Granny has now gone, she remains in our hearts, especially at christmas time when we contine the tradition of baking german recipe gingerbread cookies and we decorate our gingerbread houses just like we did as children".

8 tablespoons golden syrup (120ml)
3oz margarine (75gm)
3oz soft brown sugar – dark or light as you prefer (75gm)
1lb sifted plain flour (400 gm)
2 level tablespoons cinnamon (this is 30ml)
1 level tablespoon of bicarbonate of soda – 15ml
2 tablespoons water
1 egg
1 egg yolk (reserve the white for later for the royal icing)
1 teaspoon Ginger - ground
1 teaspoon. Cardamom - ground
1 teaspoon. allspice- ground
1 teaspoon White pepper - ground
15 g skinned almonds - ground
15 g candied lemon peel (very finely chopped)

Glaze:
175 g Icing Sugar
2 tablespoon. hot water
2 teaspoons fresh egg white


Mix all the ingredients together (except the glaze) and form into a smooth dough. Refridgerate for 1 hour and then roll out to 1cm deep and make cookies approx 3cm across. Cover a tray with baking paper and bake the cookies for 10 - 15 Minutes at 160 degrees centigrade. Allow to cool.

Mix the glaze and spread on the cookies.
