This is a really easy fish dish that is deliciously oriental in flavour. It only takes 15 minutes to prepare and will feed a family of four.
Ingredients
- Four portions of Cod loin fillet from a sustainable source
- 1 tablespoon of flour
- 2 cloves of garlic
- a child’s thumb sized piece of fresh ginger
- 3 tablespoons of rice wine vinegar or sherry vinegar
- 2 tbsp of local honey
- 1tbsp sesame seeds
- 1tsp dried chilli flakes
Dust the cod pieces with flour and fry in about a tablespoon of oil on a medium heat for five minutes till cooked through. Remove the fish from the pan to rest.
Finely chop the garlic and ginger
Add another tablespoon of oil to the pan and cook the garlic, ginger and chilli flakes over a low heat for less than a minute so you don’t burn them.
Add the vinegar and honey and cook for another minute before adding the sesame seeds and cooking for one more minute. This is now a sauce that can be poured over the fish.
Serve with Chinese style noodles or mashed potatoes.
