Nicola’s Lasagne Recipe was sent to me at home via email during her lunch hour. I have not edited the email at all, so you get an idea of the case I will be able to put in front of the divorce lawyers in years to come. Pity me my friends! The recipe is great but she is clearly out of her mind.
Lasagne Recipe Step one
Chris, go to tesco and buy (organic where possible)
- Red pepper
- 2 x tin plum tomatos
- Lasagne sheets
- Cottage cheese
- Mozarella cheese
Lasagne Recipe Step two
Make the ragu sauce.
Brown the onions, garlic (whole cloves – crushed), chopped up rosemary, red peppers, courgette and mushrooms in a saucepan. Brown the onions first then gradually add the other vegetables in the order I’ve just given them in.
Once browned add two tins of tomatoes and a squirt of tomato puree. You may also need to add a little bit of water to this mix to make sure it doesn’t boil dry. Also pop in a couple of bay leaves – bruise them a little bit before putting them in. There are some in the pestle and mortar. If they aren’t there grap a couple off our bay bush – just outside the backdoor in the pot.
Let it gently simmer for around an hour (with the lid on the pan). Check on it during this time – especially to see if needs a bit of sugar to add to the tomato flavour (though don’t add any vinegar – it doesn’t need this – and I’ll know if you have!!!!!!).
Once reduced check it for seasoning – and add salt and pepper to taste.
Once ready add the chopped up basil and stir through.
Lasagne Recipe Step three
Build the dish (get me I’m like Gary Rhodes)
Get the large orange dish thing from the cupboard above the oven. Be careful things don’t fall on you when you do this.
Layer – lasagne sheets, ragu mix and cottage cheese.
On the final top layer – top this off with some of the sauce, cottage cheese and sliced mozarella.

In the oven. This will take around 30/40 mins at 180.

Open an bottle of red and serve.
